  • 1 medium eggplant 
  • Fit salt 
  • 2 tbsp. additional virgin olive oil 
  • 1/4 c. naturally ground Parmesan 
  • 1 tsp. Italian flavoring 
  • 1 tsp. garlic powder 
  • Naturally ground dark pepper 
  • Marinara, for plunging (discretionary) 


  1. Preheat broiler to 350°. Cut eggplant into exceptionally slender rounds, on a mandoline, if conceivable. Lay cuts of eggplant on paper towels in an even layer. Season gently, at that point let sit for 10 minutes. Wipe any unmistakable dampness offcuts with a paper towel and flip. Continue salting, resting, and drying process again. 
  2. Exchange eggplant cuts to a vast bowl and hurls with oil. Include Parmesan, Italian flavoring, and garlic powder to the bowl. Season with dark pepper and hurl until cuts are equally covered in seasonings.
